Why the blog...?

Hello and welcome to duck and thyme. I started this blog as a way of aiding my recovery from Chronic Fatigue Syndrome which started at the end of 2013. It is aimed at motivating me to push myself a little more - cooking may appear rather easy for the normal us but for someone like me, planning recipes, grocery shopping, forgotten items and actual cooking all add to my stamina and wellbeing in both the physical and mental sense. I am very happy to say that I am well on the road to recovery, and since I started this blog, going from strength to strength.

In addition, and possibly because of, I have also been battling with food issues since 2008 and with years of scans, tests and whatever not, I was only diagnosed with my intolerances in April 2014 - when it rains, it pours. Saying good bye to wheat, eggs, rice (!), soya, cow's, sheep's and goat's dairy, and yeast was tough but so worth it as I was completely changed in 3 weeks - constant stomach pains, nausea, vomiting, the opposite of vomiting (charming, as always) and loss of concentration - despite my chronic fatigue. As I was addicted to desserts, I have tried quite a few allergy free recipes from the internet but was always tweaking them and call it personal preference, it's always better...!

So this blog is about motivating myself to live a fuller life and to embrace my intolerances with my own allergy free recipes. A healthier life in all and every aspect!
